This is from a magazine ad for Near East* products.
1 box Near East* vermicelli pasta with roasted garlic and olive oil
3 T olive oil, divided
1/2 lb filet mignon cut in 1 inch cubes
2 minced garlic cloves
1 cup diced tomatoes
Salt and pepper to taste
1T chopped parsley, for garnish
Prepare vermicelli per package directions.
Set aside and keep warm. Heat 1T oil in large skillet, brown beef cubes.
Remove from pan and set aside. Add remaining oil to pan and cook garlic
1-2 min, do not brown. Add tomatoes and cook 2min. Add salt and pepper.
Return beef to pan, add vermicelli and combine well. Garnish with
parsley.
Serves 2-4
*If you don't have Near East pasta where you live, Rice-a-Roni has the
same flavor, but isn't quite as good.
