I want to thank everyone who participated in this. The issue is filled with keepers, as you shall soon discover. I hope you enjoy all the recipes, but I urge you to read the Ramblings section, too. It may help us all to remember the reason for the season. Have a great day and we'll see you here tomorrow with more things to make you think and laugh.

A LETTER FROM CHRIST

Dear Believers,

It has come to my attention that many of you are upset that folks are taking my name out of the season. Maybe you've forgotten that I wasn't actually born during this time of the year and that it was some of you're predecessors that decided to celebrate my birthday on what was actually a time of pagan festival.

How I personally feel about this celebration can probably be most easily understood by those of you who have been blessed with children of your own. I don't care what you call the day. If you want to celebrate my birth just, GET ALONG AND LOVE ONE ANOTHER. Now that I have that off my chest let me go on.

If it bothers you that the town in which you live doesn't allow a scene depicting my birth, then just get rid of a couple of Santas and snowmen and put in a small Nativity on your own front lawn. If all my followers did that there wouldn't be any need for such a scene on the town square because there would be one every few feet all over town.

Stop worrying about the fact that people are calling the tree a “holiday tree” instead of a Christmas tree. That tree never actually symbolized me anyway. The tree was a part of an old pagan ritual people just started calling it by my name, then a few folks added an angel on top and a Nativity at the bottom to remind them of my birth.

If you want to give me a give me a present in remembrance of my birth here is my wish list just choose something from it.

1. Instead of writing protest letters objecting to the way my birthday is being celebrated, write letters of love and hope to soldiers away from home. They are terribly afraid and lonely this time of year. I know, they tell me all the time.

2. Visit someone in a nursing home. You don't have to know them personally. They just need to know that someone cares about them.

3. Instead of writing George complaining about the wording on the cards his staff sent out this year, why don't you write and tell him that you'll be praying for him and his family this year. Then follow up it with nice hearing from you.

4. Instead of giving your children a lot of gifts you can't afford and they don't need, spend time with them. Tell them the story of my birth. Hold them in your arms and remind them that I love them.

5. Pick someone that’s hurt you in the past and forgive him or her.

6. Did you know that someone in your town will attempt take their own life this season because they are feel so alone and hopeless? Since you don't know who that person is, try giving everyone you meet a warm smile it could make the difference.

7. Instead of nit picking about what the retailer in your town calls the holiday, be patient with the people who work there. Give them a warm smile and a kind word. Then stop shopping there on Sunday. If the store didn't make so much money on that day they'd close and let their employees spend the day at home with their families.

8. Finally if you want to make a statement about your belief in and loyalty to me. Then behave like a Christian. Don't do things in secret that you wouldn't do in my presence. Let people know by your actions that you are one of mine.

Finally don't ever forget that I'm God I can take care of myself. All you need to do is obey my commandments and let me take care of the rest.

With the weather becoming more wintry, what else comes to mind but a steaming pot of soup on the stove? The aroma fills the house, and everyone feels warmer when it is eaten. My kids go for Chicken Soup, but also love a rich beef stew. Of course, being a chile-head, I love a spicy chili. What melts the heart and warms the soul at your house? The soup's on, folks... send us your favorite soup recipes. We will collect them all month and post them on the first Sunday of January. Please understand that we do not wish to infringe on copyrighted material; if your source states it is copyrighted then do not send it. Make sure to view the rules section to ensure your submissions are acceptable.

One Day After Christmas

It's one day after Christmas
I'm crabby and I'm broke.
I'm so full of ham and fruitcake
I think I'm gonna croak.

It's nice to see the relatives
I wonder when they'll leave.
They've been camping in my bathroom
since early Christmas Eve.

They're eating everything in sight
and sleeping in my bed.
I been sacked out in the basement
with my beagle, Fred.

The relatives have all gone out
and left their screaming brats.
The toilet bowl is all plugged up
and I can't find the cat.

It's Christmastime at my house,
the relatives are here.
They eat me out of house and home.
and drink up all my beer.

I love the decorations,
and the sleigh bells in the snow
But I wish those pesky relatives
would take their kids and go.

Those cookie crunchers fed the dog
a twenty pound rib roast.
His feet are sticking in the air
like skinny old fence posts.

Now they're in a free-for-all,
the girls against the boys.
They're fighting over boxes
'cause they're bored with all their toys

My mother-in-law is snoring
in my favorite TV chair.
Those kids are stringing lights on her
and tinseling her hair

I oughta wake her up
before the fireworks begin.
But I wanna see those blue sparks fly
when they plug her in.

CHRISTMAS GIFT LOAF

(Rusty made up some of this yummy-sounding recipe and gave it to each person who attended the Florida a2z get-together in May, 2005.)

1 8oz Cream Cheese
1 c butter
1 1/2 c sugar
2 tsp vanilla
4 eggs
2 c flour
1 1/2 tsp baking powder
1/2 c chopped nuts
1 10oz Maraschino cherries, drained
1/4 c flour
1/4 c finely chopped nuts

Blend cheese, butter, sugar and vanilla. Add eggs one at a time. Gradually add sifted flour with baking powder. Combine cherries that have been halved and nuts with 1/4 c four to coat. Fold into batter. Pour into greased and floured pans. (2 small loaf pans or 1 tube pan) Sprinkle with chopped nuts and bake in 325 oven for 1 hr and 20 min. or until the sides shrink. Cool before removing. These freeze very well.


PECAN CAKE

4 c. pecans cut in half
1 c candied pineapple cut in half
1 c candied cherries cut in half
1 lb. dates cut in half
4 eggs
2 tsp vanilla
1 c sugar
1 c flour
1/4 c brandy

Cut up all of the fruit into a large bowl.

In another bowl beat the eggs. Add the sugar then mix in the flour and brandy. Pour this mixture over the fruit and mix until it is all coated.

This can be baked in a tube pan or 3 small loaf pans. Bake 1 1/2 hours at 300.


NEEDHAM'S

(This is probably another copy-cat recipe because these were first made and sold from the city of Needham, Mass.) When I worked in a Drug Store during my high school years Needham's were sold in the candy counter for five cents each. I think they were cut round then and were about three inches across. It was a treat to find this recipe when my children were small and we could make them to enjoy.

3/4 c mashed potato--unseasoned
1/2 tsp salt
2 1 pound boxes confectioners sugar
1 stick of margarine
1/2 pound flaked coconut
2 tsp vanilla

Pare and cook potato to make three-fourths cup mashed potato not seasoned. Add salt. Using a double boiler place stick margarine in it and melt over boiling water. Add mashed potato, confectioners' sugar, flaked coconut and vanilla.

Mix well, then turn into a buttered jelly roll pan. Spread evenly. Place in a cool place to harden. When hard, cut into small squares and dip in the following chocolate mixture.

CHOCOLATE DIP

1 12 ounce pkg. chocolate bits
4 squares unsweetened chocolate
1/2 cake paraffin (2 1/2 by 2 1/2 inches)

Use double boiler again. Place paraffin in top over boiling water to melt. Then add the two kinds of chocolate. Allow chocolate to melt. Stir well to mix ingredients.

A toothpick or cake tester may be used to dip the Needham squares. Hold each square above the chocolate mix after dipping so that it drains well. Place on waxed paper to harden. This will make 66 good sized Needhams. The recipe halves easily.


PEANUT BUTTER FUDGE

1 c white sugar
1 c brown sugar
1/3 c milk

Bring to a boil and boil 1 and 1/2 minutes. Remove from the heat and add:

1 tsp vanilla
3/4 c crunchy peanut butter
1/2 jar Marshmallow Fluff (Marshmallow Creme)
Nuts, optional

Mix together quickly and pour into buttered pan.


CHOCOLATE FUDGE

4 1/2 c sugar
1/4 lb butter
1 lg. can evaporated milk

Mix together and boil 18 - 20 minutes. Remove from the heat and add:

2 1/2 pkgs chocolate bits
1 jar Marshmallow
1 tsp vanilla nuts

Stir in until chocolate bits melt

Pour into 9 x 13 pan. Cut into squares.


SUGARPLUMS

(These make tasty gifts, particularly attractive in pretty candy wrappers.)

1 cup pitted dates
1 cup dried apricots
1 cup sultana raisins
1 cup currants
1 cup chopped walnuts
¼ cup orange liqueur
1 cup unsweetened flaked coconut

In food processor or by hand, process or chop dates, apricots, raisins and currants. Add walnuts and liqueur; process or stir to mix. Roll 1 teaspoon at a time into balls. Roll in coconut.

Makes about 24.


FLAVORED COFFEE RECIPES

Put several of these flavored coffee recipes in a gift basket for a wonder gift for a coffee lover.

Cafe Bavarian Mint Flavored Coffee

1/4 C. Powdered Creamer
1/3 C. Sugar
1/4 C. Instant Coffee
2 T. Powdered Baking Cocoa
2 hard candy Peppermints

Process in a blender on liquefy until well blended. Store in an air tight container. Use by tablespoonfuls according to taste. Spoon in cup and add hot water.

Cafe Cappuccino Flavored Coffee

1/4 C. Powdered Creamer
1/3 C. Sugar
1/4 C. Instant Coffee
1 Orange flavored piece of hard candy

Process in a blender on liquefy until well blended. Store in an air tight container. Use by tablespoonfuls according to taste. Spoon in cup and add hot water

Cafe Viennese Flavored Coffee

1/4 C. Powered Creamer
1/3 C. Sugar
1/4 C. Instant Coffee
1/2 tsp. Cinnamon

Process in a blender on liquefy until well blended. Store in an air tight container. Use by tablespoonfuls according to taste. Spoon in cup and add hot water.


INSTANT HOT CHOCOLATE MIXES

Hot Chocolate Mix

1 box (32 oz) Carnation powdered milk
1 jar (22 oz) Coffeemate
1 lb. box Hershey instant cocoa milk
1 lb. box powdered sugar

Mix in large container. Use rounded scoop in a 1/4 cup of dry mix and fill the rest of the cup with microwaved hot water.

Hot Chocolate Mix II

1 box (14 quart) non-fat dry milk
1 jar (16 oz) non-dairy coffee creamer
1 can (2 lb) Nestles Quik chocolate drink mix
2 lb. powdered sugar

Mix all ingredients together. Store in a tightly sealed container. Store and use when needed. Use 1/3 - 1/2 cup mix (depending on your own taste) with 1 cup hot water.


BLUEBERRY MUFFIN MIX IN A JAR

Pack this muffin mix in a canning jar and give with instructions for mixing and baking the muffins.

2 1/2 cups all-purpose flour 
2 1/2 teaspoons baking powder 
1/2 teaspoon baking soda 
1/4 teaspoon salt 
1/2 cup sugar 
4 tablespoons buttermilk powder 
3/4 to 1 cup dried blueberries

Pour sugar into a 1-quart wide-mouth canning jar. Add the buttermilk powder.

Sift together the flour, baking powder, soda and salt; pour half into the jar. Put the dried blueberries into a small lightweight plastic bag; tie or seal and cut off excess bag end, if necessary.* Add remaining flour mixture. Screw lid on and add a tag with instructions, or tuck instructions into the jar.

*You can add the dried blueberries right into the mixture without the bag, but they tend to sink into the dry ingredients. The bag will give the mix more of a "layered" look. 

Instructions for muffins:

Wild Dried Blueberry Muffins

2 eggs
4 ounces melted butter
1 cup water
1 teaspoon vanilla
1 jar blueberry muffin mix with dried blueberries

Whisk together the eggs, butter, water and vanilla. With a wooden spoon, stir in blueberry muffin mix just until dry ingredients are moistened. 
Spoon batter into greased muffin pans, filling each muffin cup about 3/4 full. If desired, sprinkle tops with sugar or cinnamon sugar. Bake at 375° for about 25 minutes.

Makes 18 to 24 muffins, depending on size of muffin cups.


BANANA BRAN MUFFIN MIX IN A BAG

Mix together the following and place in zipper style bag:

1 cup all-purpose flour
3 tablespoons sugar
2 1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup whole bran

Attach the following instructions:

To make your "Banana Bran Muffins", place this mix in a bowl, and add the following:

1 egg, beaten
1 cup banana, mashed and very ripe
1/4 cup milk
2 tablespoons oil

Stir just until the flour mixture is moistened. Fill greased or paper lined muffin pans 2/3 full with mixture. Bake in 400 degree F oven for about 20-25 minutes or until done. Makes 1 dozen.


SPICED TEA MIX

1 (9 oz.) jar powdered orange breakfast drink mix
1 (4 oz.) jar lemon flavored ice tea mix
1-1/2 c. sugar
2 tsp. cinnamon
2 tsp. ground cloves
1 tsp. ground ginger

Mix drink mix, sugar and spices. Label and store in tightly covered container at room temperature, no longer than 6 months.

Attach the following instructions:
To serve: For each serving mix 3 teaspoons spiced tea mix and 1 cup boiling water in mix until mix is dissolved. Garnish each with a twist of lemon or orange peel and a cinnamon stick if desired.

Makes about 5-1/4 cups mix.


JINGLE BELLS CHOCOLATE PRETZELS

These make great Christmas gifts, too.

1 cup HERSHEY'S Semi-Sweet Chocolate Chips 
1 cup HERSHEY'S Premier White Chips, divided 
1 tablespoon plus 1/2 teaspoon shortening (do not use butter, margarine, spread or oil), divided 
About 24 salted or unsalted pretzels (3x2 inches)

1. Cover tray or cookie sheet with wax paper.

2. Place chocolate chips, 2/3 cup white chips and 1 tablespoon shortening in medium microwave-safe bowl. Microwave at HIGH (100%)1 minute; stir. Microwave at HIGH an additional 1 to 2 minutes, stirring every 30 seconds, until chips are melted when stirred.

3. Using fork, dip each pretzel into chocolate mixture; tap fork on side of bowl to remove excess chocolate. Place coated pretzels on prepared tray.

4. Place remaining 1/3 cup white chips and remaining 1/2 teaspoon shortening in small microwave-safe bowl. Microwave at HIGH 15 to 30 seconds or until chips are melted when stirred. Using tines of fork, drizzle chip mixture across pretzels. Refrigerate until coating is set. Store in airtight container in cool, dry place. About 2 dozen coated pretzels.

VARIATION:
WHITE DIPPED PRETZELS: Cover tray with wax paper. Place 2 cups (12-oz. pkg.) HERSHEY'S Premier White Chips and 2 tablespoons shortening (do not use butter, margarine, spread or oil) in medium microwave-safe bowl. Microwave at HIGH 1 to 2 minutes or until chips are melted when stirred. Dip pretzels as directed above. Place 1/4 cup HERSHEY'S Semi-Sweet Chocolate Chips and 1/4 teaspoon shortening (do not use butter, margarine, spread or oil) in small microwave-safe bowl. Microwave at HIGH 30 seconds to 1 minute or until chips are melted when stirred. Drizzle melted chocolate across pretzels, using tines of fork. Refrigerate and store as directed above.


SPICED CRANBERRY CIDER MIX

Just saw this one the other day, and I'm thinking this is "must make" for me this year. Doesn't it sound good?

1/2 cup dried cranberries
12 cinnamon sticks
1/2 tsp. crushed whole cloves
2 Tbsp. whole allspice

Stir the cranberries and spices together. Store in an airtight container.

Recipe Card: For 12-14 servings, combine 2 qts. apple cider, 1 qt. water, and 1 pkg. Spiced Cranberry Cider Mix. Heat through but do not boil. Add 1-1/2 oranges, sliced. Serve warm, garnished with a few more orange slices.


ALMOND SNACK MIX

1 Box Rice Chex
2 3/4 Cups Sliced Almonds
1 Cup Sugar
1 Cup Light Corn Syrup
3/4 Cup Butter (No Substitute)
1 Teaspoon Almond Extract

Combine Rice Chex and Almonds in large bowl, set aside. In a heavy saucepan, combine sugar, corn syrup and butter. Bring to a boil over medium heat, stir occasionally, until candy thermometer reads 250 (hard-ball stage). Remove from heat; stir in extract. Pour over cereal mixture; mix well. Spread onto waxed paper-lined baking sheets; cool. Toss to break apart. Store in an airtight container.

As a gift from the Kitchen: Place in cellophane bags with a festive ribbon. These were great hits when I gave them away to my neighbors on New Years Day.


LAYERED PATCHWORK SOUP MIX
(Vegetarian)

1/2 cup barley
1/2 cup dried split peas
1/2 cup uncooked white rice
1/2 cup dry lentils
1 tablespoon dried parsley
1 teaspoon granulated garlic
1 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon dried sage

1. In a wide mouth pint jar layer the barley, split peas, rice, and lentils.

2. In a small plastic bag combine the parsley, garlic, pepper, salt, garlic powder, Italian seasoning, and sage.

3. Decorate jar lid and attach seasoning packet with ribbon to jar. Attach a recipe card with the following directions: 1. Empty jar contents into a colander and rinse. 2. Place contents in a large stockpot and cover with 10 cups water. 3. Stir in 1 chopped medium onion, and the seasoning packet. 4. Bring to a boil. Lower heat, cover and simmer for 1 hour, stirring occasionally. Check after 30 minutes and add additional water if necessary.

TACO SEASONING MIX IN A JAR

3/4 C. dried minced onion
1/4 C. salt
1/4 C. chili powder
1 T. dried oregano
2 T. cornstarch
2 T. crushed dried peppers
2 T. dried minced garlic
2 T. ground cumin

Mix ingredients together to blend. Store in a pint jar.

Yield: almost 2 cups; 2 tablespoons will season 1 pound of ground beef (I use more).


TURKEY NOODLE SOUP MIX

A welcome gift during the holiday season, when there is usually plenty of leftover turkey meat on hand.

1/4 cup red lentils
2 Tablespoons dried onion
1-1/2 Tablespoons chicken-flavored bouillon granules
1-1/2 teaspoons dried dill weed
1/8 teaspoon ground celery
1/8 teaspoon garlic powder
1 small bay leaf
1 cup uncooked medium egg noodles

Layer ingredients in the order given in a glass jar.

Pretty Packaging: Cover the lid with a round or square of fabric that is cut 2-1/2" larger in diameter than the top of the jar. Fasten with a rubber band; tie with ribbon to cover rubber band.

Gift Tag Greeting: "This makes about 10 cups of good, hot soup perfect for a cold night. Here's how to make it:"

Turkey Noodle Soup

8 cups water
1 jar Turkey-Noodle Soup mix
1 package (10 oz.) frozen mixed vegetables
2 cups cooked, diced turkey or chicken

Bring water to boil in large saucepan over high heat; stir in soup mix. Reduce heat to medium-low; cover and simmer 15 minutes. Discard bay leaf.

Stir in frozen mixed vegetables and cooked turkey. Cook 5 minutes longer or until noodles and vegetables are tender.


HOMEMADE CRISCO FUDGE BROWNIE MIX

Prep Time: 10 minutes
Bake time: 25-50 minutes
Makes 6 cups mix

2 cups sugar 
1-1/3 cups sifted flour 
1 cup unsweetened cocoa powder 
1-1/4 teaspoons baking powder 
1-1/4 teaspoons salt 
1 cup CRISCO 

In a large mixing bowl, combine sugar, flour, cocoa powder, baking soda and salt. Cut in Crisco until mixture resembles coarse cornmeal. Store in covered container up to 6 weeks at room temperature. Freeze for longer storage. To measure, lightly spoon into measuring cup; level.

To make Brownies: Preheat oven to 350ºF. Spray an 8x8-inch baking pan with Crisco No Stick Cooking Spray; set aside. In large mixing bowl beat 2 eggs with 1 teaspoon vanilla. Add 3 cups Mix; stir until nearly smooth. Stir in 1/2 cup chopped nuts. Spread, in prepared pan. Bake about 25-30 minutes or until a toothpick inserted in the center yields moist crumbs. Cool. Sift confectioners sugar over top. Cut into squares and serve.


HERBED BEER BATTER BREAD MIX

To make the mix you will need:
2 3/4 cups all purpose flour
2 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
1/4 teaspoon each of dried thyme and oregano
Dash of dried dill

In a large bowl, stir together flour, sugar, baking powder, salt oregano, thyme and dill. Pack this mixture into an airtight container or bag. The mix can be stored at room temperature for up to 1 month. It will make 1 loaf of bread.

For Herbed Beer Bread

Herbed Beer Bread Mix
1 can of beer at room temperature
1 teaspoon butter, melted

Place the Beer Bread Mix in a large bowl. With a wooden spoon, stir in beer just until incorporated. Scrape into greased 8"x4" (1.5L) loaf pan.

Bake in 375ºF oven for 45 to 50 minutes or until crusty and golden brown. Let stand in the pan for 5 minutes then remove to rack and brush with melted butter. Makes 1 loaf.


OLD FASHIONED OATMEAL COOKIE MIX

To make the mix you will need:
6 cups rolled oats
4 cups all-purpose flour
3 cups packed brown sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
1 pound shortening
2 cups raisins
1 1/2 cups shredded coconut
1 cup chocolate chips
1 cup chopped pecans

In a large bowl, stir together oats, flour, sugar, cinnamon, baking powder, salt and baking soda. With a pastry blender, cut in shortening until crumbly.

Stir in raisins, coconut, chocolate and pecans. This mix can be refrigerated in an airtight container for up to 10 weeks. Makes about 5 batches of cookies.

Old Fashioned Oatmeal Cookies

4 cups Oatmeal Cookie Mix
1 egg, lightly beaten
2 tablespoons milk
2 teaspoons vanilla

In a bowl, combine the Oatmeal Cookie Mix with egg, milk and vanilla until dough forms. Shape into 1 1/2" balls and place on greased baking sheets. Flatten balls with a fork.

Bake in 375ºF oven for 15 to 18 minutes or until golden. Remove to racks and let cool. Makes 24 cookies.


CHOCOLATE FUDGE IN A MUG

1/4 cup semisweet chocolate chips
1/4 cup granulated sugar
1 tablespoon finely chopped walnuts or pecans

Measure into a small zip-type plastic bag, then seal and shake to combine.

1/2 cup miniature marshmallows

Measure marshmallows into a separate small zip-type plastic bag.

Line a 1 1/2 to 2 cup microwave-safe mug with tissue paper in a coordinating color. Place chocolate chip bag in bottom, then add the marshmallows bag to the top.

Attach a gift tag with the following instructions:

Chocolate Fudge

Combine Fudge Mix and 2 1/2 tablespoons butter or margarine and microwave for 3 minutes. Remove, and quickly stir in marshmallows until melted. let cool for 5-7 minutes and then place in refrigerator for 8-10 minutes to set.


GOLDEN RICE PILAF MIX

4 C. uncooked Long-grain White Rice
1 1/3 C. Seedless Golden Raisins
1 C. chopped Dried Apricots
1/4 C. Instant Minced Onion
1/4 C. Chicken Bouillon Granules
1 T. plus 1 t. Sugar
1 t. Ground White Pepper

Combine all ingredients in large bowl; mix well. Place 1 3/4 cups rice mix in each of 4 airtight containers or self-sealing plastic bags.

Makes 4 rice mixes.

Preparation instructions: 
Combine 1 rice mix, 1 3/4 cups water and 1 tablespoon butter or margarine (optional) in 2- to 3-quart saucepan. Bring to a boil; stir once or twice. Reduce heat; cover and simmer 15 minutes, or until rice is tender and liquid is absorbed. Fluff with fork.

Makes 6 servings.
