Memory Lane Again
A little house with three bedrooms and one car on the street,
A mower that you had to push to make the grass look neat.
In the kitchen on the wall we only had one phone,
And no need for recording things someone was always home.
We only had a living room where we would congregate,
Unless it was at meal time in the kitchen where we ate.
We had no need for family rooms or extra rooms to dine,
When meeting as a family those two rooms would work out fine.
We only had one TV set and channels maybe two,
But always there was one of them with something worth the view.
For snacks we had potato chips that tasted like a chip,
And if you wanted flavor there was Lawson's ® onion dip.
Store bought snacks were rare because my mother liked to cook,
And nothing can compare to snacks in Betty Crocker's ® book.
The snacks were even healthy with the best ingredients,
There was no label with a hundred things that made no sense.
Weekends were for family trips or staying home to play,
We all did things together even go to church to pray.
When we did our weekend trips depending on the weather,
No one stayed at home because we liked to be together.
Sometimes we would separate to do things on our own,
But we knew where the others were without our own cell phone.
Then there was the movies with your favorite movie star,
And nothing can compare to watching movies in your car.
Then there were the picnics at the peak of summer season,
Pack a lunch and find some trees and never need a reason.
Get a baseball game together with the friends you know,
Have real action playing ball and no game video.
Remember when the doctor used to be the family friend,
And didn't need insurance or a lawyer to defend,
The way that he took care of you or what he had to do,
Because he took an oath and strived to do the best for you.
Remember when the country was united under God,
And prayer in schools and public places was not deemed as odd.
Remember when the church was used for worshipping The Lord,
And not used for commercial use or for some business board.
Remember going to the store and shopping casually,
And when you went to pay for it you used your own money?
Nothing that you had to swipe or punch in some amount,
Remember when the cashier person had to really count?
Remember when we breathed the air it smelled so fresh and clean,
And chemicals were not used on the grass to keep it green.
The milkman and the bread man used to go from door to door,
And it was just a few cents more than going to the store.
There was a time when mailed letters came right to your door,
Without a lot of junk mail ads sent out by every store.
The mailman knew each house by name and knew where it was sent,
There was not loads of mail addressed to present occupant.
Remember when the words "I do" meant that you really did,
And not just temporally till someone blows their lid.
There was no thing as no one's fault; we just made a mistake,
There was a time when married life was built on give and take.
There was a time when just one glance was all that it would take,
And you would know the kind of car, the model and the make.
They didn't look like turtles trying to squeeze every mile,
They were streamlined, white walls and fins and really had some
style.
One time the music that you played when ever you would jive,
Was from a vinyl, big holed record called a forty-five
The record player had a post to keep them all in line,
And then the records would drop down and play one at a time.
Oh sure we had our problems then just like we do today,
And always we were striving trying for a better way.
And every year that passed us by brought new and greater things,
We now can even program phones with music or with rings.
Oh the simple life we lived still seems like so much fun,
How can you explain a game, just kick the can and run.
And why would boys put baseball cards between bicycle spokes,
And for a nickel red machines had little bottled cokes.
This life seemed so much easier and slower in some ways,
I love the new technology but I sure miss those days.
So time moves on and so do we and nothing stays the same,
But I sure love to reminisce and walk down memory lane.

The only cow in a small town in Kentucky stopped giving
milk. The people did some research and found they could buy
a cow in Kansas for $200.00. They bought the cow from
Kansas and the cow was wonderful. It produced lots of milk
all of the time, and the people were pleased and very happy.
They decided to acquire a bull to mate with the cow and
produce more cows like it. They would never have to worry
about their milk supply again. They bought a bull and put it
in the pasture with their beloved cow.
However, whenever the bull came close to the cow, the cow
would move away. No matter what approach the bull tried, the
cow would move away from the bull and he could not succeed
in his quest.
The people were very upset and decided to ask the Vet, who
was very wise, what to do. They told the Vet what was
happening. "Whenever the bull approaches our cow, she moves
away. If he approaches from the back, she moves forward.
When he approaches her from the front, she backs off. An
approach from the side and she walks away to the other
side."
The Vet thinks about this for a minute and asked, "Did you
buy this cow in Kansas?" The people were dumbfounded, since
they had never mentioned where they bought the cow.
"You are truly a wise Vet," they said. "How did you know we
got the cow in Kansas?"
The Vet replied, with a distant look in his eye, "My wife is
from Kansas."

MINIATURE APPLE UPSIDE-DOWN CAKES

Apples are what most people think of when autumn arrives. Whether you
are picking apples, baking apples or just crunching on apples, they are the
perfect complement to the season. These miniature cakes are just great
when served warm, and topped with vanilla ice cream.
Ingredients:
Topping:
2 large apples, peeled, cored and sliced
2 tablespoons light brown sugar
1 tablespoon unsalted butter
1/2 teaspoon cinnamon, grated
Cake Batter:
1 1/2 cups all-purpose flour
3/4 cup sugar
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ginger
3 tablespoons butter, melted
1/4 teaspoon vanilla
3 eggs
3/4 cup plain yogurt
Directions:
Preheat oven to 350°F. Prepare apple topping; heat one tablespoon of
butter in a small skillet over medium-high heat. Once melted, add apples,
brown sugar and cinnamon and cook for approximately 4-5 minutes, or
until apples are tender. Once cooked, divide apple mixture evenly among
12 wells of a non-stick muffin pan and prepare the cake batter
In a large mixing bowl, combine flour, sugar, baking soda, baking
powder, salt and ginger and mix well. Add melted butter, vanilla,
eggs and yogurt to this mixture and mix until there are no visible
lumps of flour remaining, being sure to scrape the sides of the
bowl as you mix. Divide this mixture evenly among the wells of
the muffin pan, placing the batter over the apples. Bake for 30
minutes, or until cakes are golden brown, or when a toothpick
inserted into the center of the cake comes out clean.
Allow cakes to cool, and turnout muffin pan onto a baking sheet.
Serve warm, and top with your favorite ice cream.
Yields: 12 individual servings

CRAB-STUFFED MUSHROOMS

INGREDIENTS:
12 extra large Mushrooms
4 tablespoons Butter, melted
1 cup Crabmeat
2 eggs, beaten
2 tablespoons Mayonnaise
1 1/2 teaspoon LaDon's Lemon pepper
Dash Worcestershire sauce
1/2 teaspoon Louisiana Hot Sauce
1/2 cup Breadcrumbs
3/4 teaspoon Louisiana Cajun Seasoning (or more to taste)
DIRECTIONS:
Remove the stems from the mushrooms. Brush the caps with butter and place on
a cookie sheet. Pre-heat the oven to 375. Blend together in a mixing bowl
the crab, eggs, mayonnaise, lemon pepper, Cajun Seasoning, Worcestershire,
hot sauce and 1/2 of the breadcrumbs. Add the mixture to the mushroom caps.
Top with the remaining breadcrumbs. Drizzle on the butter. Cook for 15
minutes.
Yield: 12

2 slices bacon
1/2 pound pork sausage links, cut in 1/2 inch pieces
1 cup all purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 1/2 cups milk
3 beaten eggs
Cook bacon till crisp. Drain, set aside 2 tablespoons drippings. Crumble bacon, set aside. In same skillet brown sausage, drain off fat. Stir together flour, baking powder; and salt. Add milk and eggs; beat till smooth.
Spread reserved bacon drippings in a 10x6x2 inch baking dish. Place sausage pieces in dish; sprinkle with crumbled bacon. Pour batter over all. Bake uncovered, at 400 F. till set, 30 to 35 minutes.

LAMB CHOPS WITH BLACK OLIVES

Time: 25 minutes
12 lamb rib chops
1/4 cup olive oil
3 cloves garlic, peeled and thinly sliced
crosswise
1 teaspoon red chili flakes
1 teaspoon dried oregano
Finely grated zest of 1 lemon
2 tablespoons lemon juice
15 large black olives (or 20 small), pitted
and sliced
1 teaspoon Maldon salt or 1/2 teaspoon table salt
2 tablespoons vegetable oil.
1. Spread chops between two layers of plastic wrap.
Using rolling pin or kitchen mallet, pound them until
they are all an even thickness. Place the chops in a
single layer in a large glass dish.
2. In small bowl, combine olive oil, garlic, chili
flakes, oregano, zest, juice and olives. Pour mixture
over chops. Season to taste with salt. Turn chops in
the marinade to coat both sides. Cover with plastic
wrap. Marinate for 1 to 2 hours at room temperature.
3. Place large skillet over high heat, and add
vegetable oil. Remove chops from marinade, scraping
off excess, and place them in skillet; reserve
marinade. Sear until browned, about 2 minutes a side.
Reduce heat to medium, and add reserved marinade and
2 tablespoons water. Simmer until cooked to taste,
about 5 minutes for rare chops.
4. To serve, transfer chops to a platter. Top with
pan juices and serve immediately.
Yield: 4 servings.

Mint Filling:
Ingredients
1 3-oz. package cream cheese, softened
2 cups powdered sugar
1/2 tsp. vanilla extract
1/4 tsp. peppermint extract (or more to taste)
3 to 5 drops green food coloring
Directions
In small bowl, mix all mint filling ingredients until smooth. Add 2 to 3 tsp.
milk if needed for spreading consistency.
Spread over brownies and refrigerate 10 minutes.
Chocolate Topping
Ingredients
6 Tbsp. butter
1/2 cup Hershey’s cocoa
2 cups powdered sugar
3 Tbsp. milk
1 tsp. vanilla extract
Directions
In small sauce pan over low heat, melt butter.
Add cocoa and cook, stirring constantly just until mixture is smooth.
Remove from heat and add powdered sugar, milk and vanilla
Cook over low heat, stirring constantly until mixture appears melted and glossy.
Pour mixture quickly over mint filling/brownie layer.
Cut into squares and serve.
Note: Freezes very well.

STIR-FRY CHICKEN & CASHEWS

1 lb. boneless, skinless chicken breasts, cut in thin strips
2 T. soy sauce
1 T. cornstarch
1 small cabbage, shredded (about 4 cups)
2 T. oil
1 t. sugar
6 oz. pkg. cashews
1 small onion chopped
1 t. cornstarch
1/4 cup soy sauce
1/2 lb. mushrooms
2 T. oil
3 oz. Chinese noodles or rice
In bowl, place chicken with 2 T. soy sauce and 1 tbsp. cornstarch. Blend
well. Let stand at room temperature for 15 minutes. Heat 2 T. oil in wok
or skillet on high. Add chicken, stir fry until white and firm. Add onion and
mushrooms, stir fry until tender and soft. Place in heated bowl. Add 2 T.
oil to wok. Stir in cabbage and sugar. Stir fry 3-4 minutes, until cabbage
is tender crisp. Return chicken and vegetable mixture to wok. Add nuts.
Toss to combine. Add 1 T. cornstarch to 1/4 cup soy sauce. Add to wok.
Stir Cover and steam for 1 minute. Uncover, stir until thickens. Serve
over noodles or rice.

BROILED BANANAS WITH COCONUT AND CINNAMON

4 ripe bananas
1 tablespoons lemon juice
2 tablespoons packed brown sugar
2 tablespoons unsweetened desiccated
coconut
¾ teaspoon cinnamon
Peel bananas; cut in half lengthwise. In baking dish large enough to hold
them in a single layer, arrange bananas. Sprinkle with lemon juice.
In small bowl, combine brown sugar, coconut and cinnamon. Sprinkle evenly over bananas.
Place under hot broiler; broil 3 to 5 minutes or until bananas are golden brown and tender.
Serves 4

CHICKEN AND VEGETABLE CASSEROLE
2 each chicken breasts, halved
1 cup pearl onions
2 each potatoes, peeled, quartered
1 each 10oz can cream of mushroom soup
1/4 tsp dried leaf thyme
1 each bay leaf
4 each carrots, quartered
2 each celery stalks, large pieces
1/4 cup chicken broth
1/2 cup skim milk
1/8 tsp ground sage
Directions
Preheat oven to 350F. Rinse chicken and pat dry. Heat a medium size
non stick skillet over low heat; spray lightly with vegetable spray.
Add chicken and cook quickly until browned on both sides. Remove
chicken to a medium size shallow casserole. Add vegetables to
casserole. In a small bowl combine broth, soup milk, thyme, sage and
bay leaf; pour over chicken and vegetables. Bake, covered 1 hour or
until vegetables and chicken are tender. Cal: 343; Fat: 9.

HOT FROTHY BUTTERSCOTCH

This is a wonderful alternative to hot cocoa.
1 cup skim milk
1 tablespoon brown sugar, packed
1/2 teaspoon butter-flavored extract
32 miniature marshmallows, divided
Place the milk, brown sugar, and extract in a heavy medium-size
saucepan, and stir to mix. Place the saucepan over medium-high heat,
and, stirring constantly, heat until the mixture begins to reach a
boil. Reduce the heat to medium or medium-low, and add 20 of the
marshmallows. Continue to heat, stirring constantly, until the
marshmallows begin to melt.
Remove the saucepan from the heat, and whip the mixture with a wire
whisk until it becomes frothy.
Place 6 of the remaining marshmallows in the bottom of each of 2 mugs.
Pour the butterscotch mixture over the marshmallows, and serve
immediately.
Yield: 2 servings
