Hello and welcome to another daily issue of A to Z Recipes. I am so glad you decided to join us and hope the July 4th festivities were fun for you. We had some of the kids' friends over, ate, and played card- and video games. It was great fun. When you get to be my age, one of the best things is when that last teen has left and you plop in a chair and say "never again!". Seriously, we did have a great time. We did our fireworks watching the night before and it was at the school grounds less than a block away from our front porch. Trey and I had ring-side seats on our own lawn. Lots of folks chose the corner house lawn (ours) to congregate which made watching more fun. I was relaying the events to Rusty in Florida and recalled the most memorable part of the evening (besides the fireworks which were outstanding for such a small community!):

We had great fun as the fireworks were shot a block from our house, so he did not have to go anywhere to get a "bird's eye" view. You should have seen him...just as the last was discharged and in the moment of silence that follows, Trey screams (at the top of his hefty lungs):

"GOD BLESS AMERICA!!!"

The crowd joined in and you could hear a wave of voices, carrying Trey's message. For a teenager, during a moment of introspection and awe in His power, to place God on the tongues of strangers is a miracle.

America's founders did not intend for there to be a separation of God and state as it is being interpreted today and as shown by the fact that all 50 states acknowledge God in their state constitutions:

For a different look to sweet breads like pumpkin bread, Banana bread, bake in 1 lb coffee cans. grease and flour just like you would for bread pan.

When I wash vegetables (especially leafy spinach or Swiss chard) or fruit, I fill the kitchen sink with cold water and add baking soda. I move the vegetables around in the water and then let them soak for about 3 minutes. Then rinse. This procedure has all the dirt sink to the bottom, then rinse again and all is ready to use. Fruit will look much brighter.

I keep a large supply of dried vegetables on hand. It saves time shopping, and also saves money as I cook for one, and otherwise have to throw away a lot of spoiled veggies.

My new favorite tip (and it is not my own) is to open the dishwasher door before spraying pans or dishes with nonstick spray and hold the pan or dish over the door. There is no mess on the counter or sink and it all washes away when you wash the dishes!

To tame the heat in hot peppers, remove the seeds (which carry the heat). You can also soak the peppers in sugar water for about an hour to put out even more of the fire (especially helpful when making stuffed peppers). Use 2 cups water to 2 tablespoons sugar. High Flavor, Low Fat Mexican Cooking

Did you get any chocolates for Christmas, Valentine's Day or Easter? Save the plastic inserts from the box and use to make decorative ice cubes for summer drinks. They can be reused many times.

To revive marshmallows that have become hard, place them in a plastic bag with a couple slices of fresh bread. Seal the bag and after a few days the marshmallows will be as good as new.

To avoid foods running together on the plate, spoon liquid-filled vegetables into a small ramekin or flat bowl placed on the plate. It not only keeps spinach from running into your salmon, but it makes a nice presentation, too.

Sprinkling French toast with sesame seeds prior to cooking provides a crunchy taste.

When cooking pasta or rice (brown, long grain or wild rice), cook extra. Freeze 1 cup servings in zip lock bags. It heats quickly in the microwave for quick meals

Next Monthly Theme...

Fresh Is Best!

What a great theme topic as we all know, fresh is best! So, what are we looking for in this month's theme? We would like recipes using fresh ingredients. No canned vegetables, fruit, etc. It would be ideal if all ingredients were fresh, although some seasonings and spices that are dried may be used. This is great for those of you who, like me, shy away from a lot of canned goods. A peek in my pantry will find very few canned or packaged goods, but almost never a packaged gravy, sauce, etc. Let's have some fun with this theme while the picking is great for fresh fruits and vegetables.

Here is the recipe submission set of rules:

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

Thibodaux and Boudreaux

Thibodaux and Boudreaux are a couple of drinking buddies who work as airplane mechanics in New Orleans. One day the airport is fogged in and they're stuck in the hanger with nothing to do.

Boudreaux says, "Man, I wish we had something to drink." Thibodaux says, "Me, too. Y'know, I heard you can drink jet fuel and get a buzz. You wanna try it?" So they pour themselves a couple of glasses of high octane hooch and get completely smashed.

The next morning Boudreaux wakes up and is surprised at how good he feels. In fact, he feels great. No hangover. No bad side effects. Nothing. Then the phone rings. It's Thibodeaux.

Thibodaux: Hey, how do you feel this morning?

Boudreaux: Great!

Thibodeaux: I feel great, too. You don't have a hangover?

Boudreaux: No, that jet fuel is great stuff, no hangovers, nothing. We oughta do this more often.

Thibodeaux: Yeah. Well, there's just one thing....

GRAPE & GINGER TART

Crumb Crust (directions follow)
1 package (8 ounces) light cream cheese
¼ cup reduced-fat sour cream
2 tablespoons light brown sugar
4 tablespoons finely slivered or
chopped crystallized ginger
2 cups seedless green and red grapes (and black if available) halved
2 tablespoons apple jelly, melted

Prepare and bake crust (see below)

In medium bowl, with spoon or fork, mix cream cheese, sour cream, sugar and 3 tablespoons of the crystallized ginger until evenly blended. Spoon filling into cooked crust; spread evenly.

Place enough grape halves, cut side down, on top of filling to make a single layer. Scatter remaining grape halves over pie.

Wit pastry brush, carefully brush warm apple jelly over grapes and sprinkle with remaining 1 tablespoon crystallized ginger. If not serving right away, cover and refrigerate up to 1 day. Let tart stand at room temperature 15 minutes before serving.

Makes 10 servings.

Crumb Crust:
(For one 9-inch shell)
1 1/2 cups fine gingersnap cookie crumbs (about 30 cookies)
2 tablespoons sugar
5 tablespoons butter, melted

Preheat oven to 375° F. In medium bowl, with fork, stir crumbs and sugar with melted butter until evenly blended and moistened. With hand, press mixture onto bottom and up sides of 9-inch tart pan with removable bottom.

Bake crust 8 to 10 minutes. Cool on rack.



OYSTER CRACKER SNACKS

~Submitted by Edna, Decatur, IL

1 pkg plain oyster crackers
1 pkg Hidden Valley Ranch Buttermilk Ranch salad dressing mix
1 tsp dill weed seed
1/4 tsp garlic powder
3/4 cup salad oil

Pour all ingredients in a 9 X 13 pan; mix well. Place in warm oven (250) for 10-20 min, stirring often to prevent burning.



MOLASSES BBQ BEANS

2 pounds navy or small white beans, soaked overnight
2 cups chopped white onions
2 cups chopped red onions
1/4 cup minced garlic
1/2 cup red wine vinegar
1 1/2 tablespoons Dijon mustard
1 1/4 tablespoons soy sauce
2 cups dark brown sugar
1/4 cup Worcestershire sauce
1/4 cup ketchup
3 tablespoons dark chili powder
2 chopped canned chipotle chilies
1 pound canned plum tomatoes
1/2 cup molasses
Honey
Salt and pepper

Cook white beans according to directions on package until slightly tender. In a saucepan combine the remaining ingredients and simmer for 45 minutes. It is important to cook the beans and make the sauce at the same time so that the hot beans will absorb the hot sauce. Season to taste with honey, salt and pepper. The beans should cook an additional 30 minutes in the sauce so that they are tender and have fully absorbed the flavor.



SCALLOPS WRAPPED IN BACON
Makes 24 Pieces

Ingredients:

3 tbsp. soy sauce
1 tbsp. Mirin (Chinese Rice Wine)
1/4 tsp. hot Asian garlic chili sauce
1 tsp. grated fresh ginger
1 tsp. garlic finely chopped
1 pinch sugar
1 tsp sesame oil
12 lg. sea scallops; halved
12 thin slices bacon
24 wooden toothpicks; soaked in water for 1 hour

Instructions:

In a bowl, combine the soy sauce, mirin, chili sauce, ginger, garlic, sugar and oil. Add scallops and toss well. Set aside to marinate for 1/2 hour under refrigeration.

Cook the bacon until lightly browned but only about half cooked. It must still be flexible enough to wrap around the scallops. Cut each piece in half.

Preheat your oven to 450 degrees.

Remove the scallops from the marinade and pat dry. Wrap each scallop in a piece of bacon and secure it with a toothpick.

Place the wrapped scallops on a broiler pan and cook for about 6 minutes until bacon is crispy and the scallops are firm. Serve immediately.




MARGARITA PIE

1/2 cup butter or margarine, melted
5 ounces (oz.) pretzels
1 tablespoons sugar
1 1/2 quarts vanilla ice cream, softened
3 oz. frozen limeade concentrate, thawed
2 oz. tequila
1 oz. orange liqueur
1 whole lime, grated and juiced

Prepare pie early in the day or the night before. While crushing pretzels in the food processor add sugar and butter. Firmly press mixture in bottom and up sides of 9-inch pie plate. Freeze 1 hour. Mix the remaining ingredients in a large mixing bowl until combined. Put filling in pie crust and freeze until firm, about 4 hours.

LOW FAT BAJA CHICKEN

4 boneless, skinless chicken breast halves
seasoning salt and pepper
1 garlic clove, crushed
2 tbsp olive oil
2 tbsp tarragon vinegar
1/3 cup dry sherry

Preheat oven to 350 degrees. Sprinkle chicken with seasoning salt and pepper. Crush garlic into oil and vinegar in a skillet and place over medium high heat. Saute chicken breasts until golden brown, turning frequently. Remove and place in a baking dish. Pour sherry over and place in oven for 10 minutes.

For Two...



SWEET DEVIL CARROTS

This earthy root vegetable climbs to new heights in this fast and fancy recipe.

1/2 pounds carrots, cut into 2'¹ x 3/4" sticks
1/8 teaspoon salt
1 tablespoons butter
1/4 cup brown sugar
1 tablespoons prepared mustard
1/4 cup chopped parsley

Cook carrots with salt in boiling water to cover until tender. Drain. Place butter, sugar and mustard in a large saucepan. Cook over low heat, stirring, until syrupy, about 3 minutes. Add cooked carrots and toss gently to coat with sauce. Add salt, if needed. Place in a heated serving dish. Sprinkle with parsley.

Yield: 2 servings

SCOTCH EGGS

This recipe originated in Scotland for golfers to carry a meal in their pockets.

6 hard boiled eggs
1 lb. spicy sausage meat
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 C flour, divided
1 C breadcrumbs
1 tsp. salt
2 tsp. pepper
1 tsp. paprika
2 eggs, beaten

oil for frying

Peel the eggs and set aside. Mix sausage and spices in a small bowl. Divide sausage into 6 equal portions, set aside. Mix breadcrumbs with salt, pepper and paprika, set aside.

Dry each egg with a paper towel, then roll lightly in flour to coat. Take one portion of sausage and using hands, shape a coating around the hard boiled egg, completely enclosing it. Roll in flour again, then dip in beaten egg then roll in breadcrumb mixture. Repeat with remaining eggs.

Heat about 2-3 inches of oil in a large skillet. Fry eggs, turning frequently, until golden brown on all sides. Make sure sausage is thoroughly cooked.

Drain on paper towels. Let cool slightly before serving. To serve, cut each in half and serve with some good mustard.

Note: these are also good with white sauce drizzled over each egg before serving.
