Good morning to one and all. After a fairly sleepless night (and still slapping that alarm clock snooze button) I greet the day. Even though I did not rest well last night and could have been here earlier, I have managed to get to my desk much later than usual this morning. After a couple of hours at work I am sure the rough start will not matter. There's nothing like work to make you forget about sleep, right?

I will make this brief but wish to pass along some very sad news. Family member Edna in Illinois reported to me late last night that Stephanie, her lovely daughter, finally ended her brave battle against cancer. She passed away and is at "home" with her heavenly father now. She leaves behind 2 children, Jamie and Tali, and a husband, James. She asks that we pray for them in their acceptance that Stephanie will not be living at their house any longer. Please take a moment to remember them in your prayers.

SPECIAL POEM FOR SENIOR CITIZENS!!

A row of bottles on my shelf
Caused me to analyze myself.
One yellow pill I have to pop
Goes to my heart so it won't stop.
A little white one that I take
Goes to my hands so they won't shake.
The blue ones that I use a lot
Tell me I'm happy when I'm not.
The purple pill goes to my brain
And tells me that I have no pain.
The capsules tell me not to wheeze
Or cough or choke or even sneeze.
The red ones, smallest of them all
Go to my blood so I won't fall.
The orange ones, very big and bright
Prevent my leg cramps in the night.
Such an array of brilliant pills
Helping to cure all kinds of ills.
But what I'd really like to know...........
Is what tells each one where to go!

There's always a lot to be thankful for
if you take time to look for it. For example
I am sitting here thinking how nice it is
that wrinkles don't hurt.

Brown pork chops; season as desired (I use salt and pepper). (In baking dish do the following.) Put 1 TBSP uncooked rice on top of each. On top of rice, place a slice of tomato, a slice of onion, then a slice of bell pepper. Fill dish to rice with water. Cook, covered, 1 hour at 400-425*.

A to Z Recipes Family Reunion Plans

My family is planning a road trip in late June and I'd love to meet some of you along the way. We will be driving to Florida (from the Houston, Texas area). We had wanted to take this trip last year and could not afford to (not that we can now, lol). Unfortunately, the person my children most wanted to see for the first time in their lives, their paternal grandfather, died a few weeks ago. I'd like to ensure that they see the remaining relatives while all enjoy good health. If you live near one of these cities, maybe some of us can finally meet, face to face.

How about a cup of coffee? Great! Let's meet! Here is my schedule for when and where I will be:

-Wednesday morning, June 23rd, Biloxi, MS
-Saturday morning, June 26th, Orlando, FL
-Tuesday morning, June 29th, New Orleans, LA

Next Monthly Theme...

Fire Up That Grill!

What a perfect June theme topic. Yes, in most parts of the a2z world, the weather will be conducive to that all-time favorite type of cooking: outside on the grill. And, in honor of fathers everywhere, what better way to please his palate than stock up on some great recipes for him to prepare? Dads are not always the first to rush into the kitchen after a hard day at work and prepare dinner. But, on weekends when everyone is relaxed, he will fire up that grill and cook. It would be particularly nice of you were able to share some recipes your special dad actually uses, but also great if you simply want to send along some for all of us to enjoy. Your submissions can also include side dish recipes that are accompaniments to your favorite grilling recipes. Let's have a great June theme by sending in some favorites today for when you Fire Up That Grill!

Note: Because the American holiday of Memorial Day is on May 31st and an ideal time to use your theme recipes, we will post the June theme while still in the month of May. And, we normally ask that only two recipes be submitted for theme issues. Because you may have some tasty side dishes for this theme, you may send those along with your two entree submissions. Ready, set, get firing!

A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes (plus side dishes) and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.

The rules are as follows:

As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

The deadline for June's theme issue is Friday, May 28th.

Home Remedies

1. If you are choking on an ice cube, don't panic. Simply pour a cup of boiling water down your throat and presto! The blockage will be almost instantly removed. 

2. Clumsy? Avoid cutting yourself while slicing vegetables by getting someone else to hold them while you chop away. 

3. Avoid arguments with the Mrs. about lifting the toilet seat by simply using the sink. 

4. High blood pressure sufferers: simply cut yourself and bleed for a while, thus reducing the pressure in your veins. 

5. A mouse trap, placed on top of your alarm clock, will prevent you from rolling over and going back to sleep when you hit the snooze button. 

6. If you have a bad cough, take a large dose of laxatives, then you will be afraid to cough. 

7. Have a bad tooth ache? Hit your thumb with a hammer, then you will forget about the tooth ache. 


AND..... Sometimes we just need to remember what The Rules of Life really are: 

1.You need only two tools: WD-40 and duct tape. If it doesn't move and it should, use WD-40. If it moves and shouldn't, use the duct tape. 

2. Everyone seems normal until you get to know them. 

3. If you woke up breathing, congratulations! You have another chance! 

And finally... 

4. Be really good to your family and friends You never know when you are going to need them to empty your bedpan.

The Handyman 

One day a woman came up to her husband and told him that the TV was broken and she was missing her shows.

"Does it say cable repairman anywhere on my forehead?" he asked. 
"No," she said. 

A few minutes later she came back and told him that the porch was breaking and it was dangerous.

"Does it say carpenter anywhere on my forehead?" he asked. 
"No," she said again. 

A few minutes later she came back and told him the toilet was backed up.

"Does it say plumber anywhere on my forehead?" he asked. 
"No," she replied. 

A couple of days later he went on a business trip.
When he came back he asked how things had been. 

"Well," she said, "our neighbor down the street came over and fixed our TV, repaired our porch and unclogged our pipes." 

"What did he ask for in payment?" he wondered. 
"All he asked for was a chocolate cake or a kiss," she told him. 
"What did you do?" he asked.

She looked at him smugly and said:

"Do you see Betty Crocker written anywhere on my forehead?"




A man comes home one day and tells his wife he's taken their dog to the vet. "I'm having his tail cut off," he says. "Why, dear?" his wife asks. "The dog hasn't had any problems with his tail." "Well, your mother called and said she's coming to visit tomorrow," he says, "and I don't want any show of happiness in this house."

SWEET AND SOUR MEATBALLS

~Submitted by Stoney, Mount Hope, WV

MEATBALLS:
1 ½ lbs ground beef
½ cup cracker crumbs
1/3 cup finely chopped onion
1 egg, slightly beaten
1 ½ tsp salt (eliminate salt if using salted sunflower kernels)
¼ tsp ginger
¼ cup milk
2 cups roasted sunflower kernels (an 8- to 10-oz package should do)

SAUCE:
2 tbs cornstarch
½ cup brown sugar
1/3 cup vinegar
1 tbs soy sauce
1/3 cup chopped green pepper
1 13-oz can pineapple tidbits

In bowl combine meatball ingredients and mix well. Form into 1 ½" balls. Brown meatballs under broiler, turning as needed. Transfer meatballs to 2-qt saucepan. Discard drippings.

Prepare sauce by combining cornstarch, brown sugar, vinegar, soy sauce and juice from pineapple in a saucepan. Heat to boiling over medium-high heat, stirring constantly. Let boil 1 min. Remove from heat, add green pepper and pineapple tidbits.

Pour sauce over meatballs and simmer 20 mins.

Serve piping hot with, or over rice.

Makes 6 average servings.

(PS: I wish I could figure out how to use a soy meat-substitute in this recipe.)



DIPLES
(Dipples)

Deep Fried Greek Pastry Served with Honey - adapted from a Greek community cookbook.

2 C. honey
1 C. water
2 T. sugar
6 eggs
1 tsp. vanilla extract
2-3/4 C. flour
4-1/3 C. vegetable oil, divided
cinnamon
1 cup chopped nuts (pecans, walnuts, almonds), toasted

Boil first 3 ingredients for 10 to 15 minutes. Keep on low burner until ready to use. Combine eggs and vanilla. Add flour slowly, kneading lightly. Add 1/3 cup oil and mix well. Separate dough into five sections. Keep unused portion covered to keep from drying. Roll out each section like rolling a pie, thin. With pastry wheel, or paring knife, cut into strips 2 inches wide and the length of pastry. Roll on a fork to form circle*. Heat oil in fryer. Drop into hot oil. Remove when dough is light brown and puffed. Drain on paper towels. Dip in reserved hot syrup; sprinkle with cinnamon and nuts.

*The dough strips are sometimes formed into circles with 2 forks after they are put in the hot oil.



MINTED TOMATOES

2 tablespoons cider vinegar
1 tablespoon sugar
salt and pepper
2 tablespoons fresh mint leaves, minced
2 pounds Roma tomatoes

In a small saucepan, combine vinegar, sugar, salt and pepper. Bring mixture to a boil over medium-high heat. Stir in mint. Remove from heat and allow to cool. Slice tomatoes and place in a medium bowl. Pour vinegar mixture over tomatoes. Cover with plastic wrap and refrigerate for 1 hour before serving.

Makes 6 servings.



RAMEN PORK AND VEGETABLE SKILLET

1 Tbsp. oil
3/4 lb. boneless pork loin chops
1 onion, sliced
2 garlic cloves, minced
1-1/2 cups water
1 3-oz. pkg. pork flavor ramen noodle soup mix
1 red bell pepper, cut into strips
2 cups broccoli florets
1 cup snow peas
1/4 cup purchased teriyaki baste and glaze sauce

Slice pork into thin strips across grain. Heat oil in large nonstick skillet over medium-high heat until hot. Add pork and onion and stir-fry for 3 to 5 minutes or until pork is no longer pink. Add garlic; cook 30 seconds, stirring constantly. Remove pork, onions, and garlic from skillet.

Add water to skillet and bring to a boil. Break noodles into small pieces; add to water. Add 1 teaspoon of the seasoning packet and the vegetables; mix well. Discard remaining seasoning packet. Cover skillet and cook for 4 to 5 minutes or until vegetables are crisp-tender and noodles are tender, stirring occasionally. Add pork, onions, and garlic to skillet. Stir in teriyaki baste and glaze sauce. Stir-fry for 1 to 2 minutes or until thoroughly heated.

Makes 4-6 servings.

BASIL VINAIGRETTE

1/2 cup corn oil
1/2 cup olive oil
2/3 cup red wine vinegar
1 tablespoon minced red onion
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh oregano
1 tablespoon chopped parsley
1 teaspoon minced garlic
1 teaspoon Dijon mustard
1 teaspoon sugar
freshly-ground black pepper to taste

Combine corn and olive oils, vinegar, onion, basil, oregano, parsley, garlic, mustard, sugar and pepper in jar. Shake well before using; store in the refrigerator.

Makes 2 cups.

Heart Healthy...




BALSAMIC-ROSEMARY CHICKEN

Yield: 4 servings

INGREDIENTS

- 4 (4 ounce) pieces boneless, skinless chicken breasts, defrosted in refrigerator overnight
- 2 tablespoons Dijon mustard
- Salt and fresh ground pepper to taste
- 2 tablespoons minced garlic
- 2 tablespoons water
- 1/4 cup white balsamic vinegar
- 4 sprigs fresh rosemary

DIRECTIONS

Place chicken pieces in a casserole dish. Smooth mustard over chicken. Sprinkle with salt and pepper and garlic.

Pour water and vinegar over the chicken. Place one sprig of rosemary over each piece. Cover with foil and refrigerate for 2-3 hours to marinate.

Preheat the oven to 350 degrees F. Place the covered casserole dish in the oven and bake for 20 minutes. Remove the foil and bake for 10 more minutes to brown the chicken.

For Two...



POTATO GALETTE

A nonstick skillet and an adjustable-blade slicer make this elegant dish easy.

Active time: 10 min
Start to finish: 30 min

1 tablespoon unsalted butter
1 large russet (baking) potato (1/2 lb)
1/4 teaspoon salt
1/4 teaspoon black pepper

Special equipment: a Japanese Benriner or other adjustable-blade slicer

Melt butter in a 7 1/2- to 8-inch nonstick skillet. Peel potato and cut crosswise into 1/8-inch-thick slices with slicer. Toss potato with melted butter, salt, and pepper in a bowl, then layer potato slices, overlapping slightly, in skillet. Cover skillet with a lid, or tightly with foil, and cook over moderately low heat until underside is golden brown, about 10 minutes. Slide galette onto a dinner plate. Invert skillet over galette, then, holding plate tightly against skillet, flip galette into skillet. Cook, covered, until potato is tender when pierced with a paring knife, 10 to 12 minutes more.

Makes 1 serving.

GROUND BEEF AND PASTA CASSEROLE

An old fashioned basic. Great for when you think there's nothing in the house to fix for dinner. I thaw hamburger meat in microwave, and then continue with remainder of recipe. I've used regular corn, added peas or green beans, whatever may be left over in the fridge (and possibly saved from becoming a "science experiment", lol).

Prep: 10 minutes
Cook: 30 minutes
Servings: Serves 4-6

2 lb. lean ground beef
Salt and pepper, to taste
1 small can green chili peppers, diced
1/2-3/4 cup chopped onion
1 can white shoepeg corn, undrained
1 can tomato soup
1 small can tomato sauce
6 ounces medium-wide egg noodles
1 cup grated cheddar cheese
1/2 cup picante sauce

In skillet over medium-high heat, brown ground beef, chili peppers, onion, salt and pepper.

In separate sauce pan, combine corn, tomato soup and tomato sauce. Heat over medium about 5 minutes.

Cook egg noodles according to package directions.

Combine all ingredients, except cheese, in a large bowl. Pour into a greased 9x13-inch ovenproof baking dish. Top with cheese.

Cook in preheated 350°F oven 30 minutes or until heated through.
