Good morning and TGIF! This is one day of two each month that is truly Friday, in that I am off the weekend. I am so grateful to be off especially
since this Sunday is Mother's Day. It will be wonderful to have the day away from work and spend it with my children. As you may recall, I will normally work holidays so others can take them off. But this time, I am staying home. One (childless) person at work mentioned perhaps taking the day off to go to a BBQ at her mother-in-law's house on Sunday. This would mean someone else would come in (on overtime) to work in her place. I mentioned that most of our co-workers ARE Mothers and perhaps she should just arrive at her MIL's house late for the celebration. She started to say something, thought a moment, and said: "you know, Maggie...you are right. I will not ask for the day off. That would be selfish of me". She was not upset with me. Rather, she appeared to appreciate my comment as her own dear Mother is deceased and she valued the Mother's Days she was able to spend with her in years past. What could have been a comment (mine) that exploded into an argument turned out to be an appreciated suggestion from a friend. Besides, she is my oldest daughter's age and I would just send her to her room if she argued with me, lol.
Well my a2z family and friends...this Mother's Day (May 9th) is MY birthday. I will be 52. And I want to honestly share my "wish list" with you:
#1 I would like for you to vote. It costs nothing and would make my Mother's Day perfect. Every family has a mother and it would appear that I am the mother of this "family".
#2 I would like for you to invite at least one friend to join A to Z Recipes as a subscriber. It costs nothing and would make my birthday perfect.
Make sure to drop by the Discussion Forum as the dates of when and where I will be in June are announced. I would love to meet you in person and here's a great chance to do so if you live close to one of those cities I will be visiting.

Did You Know?...
LEMONADE ICE CUBES

Make a pitcher of Lemonade. Fill an ice tray half full with Lemonade and place a
sprig of mint, a raspberry, strawberry, lemon zest, or a lemon slice in each
cubicle and freeze. When almost frozen fill to top with more Lemonade and freeze
completely.
Save cubes in a plastic bag and serve with Ice Tea, or Lemonade for an added
zing to these ice-cold coolers. It even tastes good with scotch and soda.
Wonderful for a party or just to give a lift to a summer meal.

Like a handful of you, Bunnie here has had trouble receiving her daily dose
of a2z. Thanks goodness, she is on board again. Here is an email from her
regarding her struggle...and commitment...to a2z:
Well, Maggie, we finally did it. I'm once again getting A2Z recipes. You
probably don't remember but I changed email ISP and simply couldn't get my
change of address through to Zinester. After several attempts, and months gone
by, I finally got one this a.m. I only got this far because of YOU contacting
Zinester.
I also am receiving Martin James's delightful newsletter which had the same
problem.
You're very generous to offer me my money back. I don't mind the paltry $1.00
per month. It just absolutely amazes me that not very many of your readers do
this. I guess they are all quite willing to take but never give. My conscience
wouldn't let me do that.
Thank you, Maggie, for all your help. Now I can be part of the family again!

A to Z Recipes Family Reunion Plans
My family is planning a road trip in late June and I'd love to meet some of you along the way. We will be driving to Florida (from the Houston, Texas area). We had wanted to take this trip last year and could not afford to (not that we can now, lol). Unfortunately, the person my children most wanted to see for the first time in their lives, their paternal grandfather, died a few weeks ago. I'd like to ensure that they see the remaining relatives while all enjoy good health. If you live near one of these cities, maybe some of us can finally meet, face to face.
How about a cup of coffee? Great! Let's meet! Here is my schedule for when and where I will be:

Next Monthly Theme...
Fire Up That Grill!
What a perfect June theme topic. Yes, in most parts of the a2z world, the weather will be conducive to that all-time favorite type of cooking: outside on the grill. And, in honor of fathers everywhere, what better way to please his palate than stock up on some great recipes for him to prepare? Dads are not always the first to rush into the kitchen after a hard day at work and prepare dinner. But, on weekends when everyone is relaxed, he will fire up that grill and cook. It would be particularly nice of you were able to share some recipes your special dad actually uses, but also great if you simply want to send along some for all of us to enjoy. Your submissions can also include side dish recipes that are accompaniments to your favorite grilling recipes. Let's have a great June theme by sending in some favorites today for when you Fire Up That Grill!
Note: Because the American holiday of Memorial Day is on May 31st and an ideal time to use your theme recipes, we will post the June theme while still in the month of May. And, we normally ask that only two recipes be submitted for theme issues. Because you may have some tasty side dishes for this theme, you may send those along with your two entree submissions. Ready, set, get firing!
A to Z Recipes continues with its popular Theme Issues. We will share theme recipes and post them on the first Sunday of each month. Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes (plus side dishes) and in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
The rules are as follows:
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.

The Ant and the Grasshopper

OLD VERSION:
The ant works hard in the withering heat all summer long, building his house and
laying up supplies for the winter.
The grasshopper thinks he's a fool and laughs and dances and plays the summer
away. Come winter, the ant is warm and well fed.
The grasshopper has no food or shelter, so he dies out in the cold.
MORAL OF THE STORY: Be responsible for yourself!
MODERN VERSION:
The ant works hard in the withering heat all summer long, building his house and
laying up supplies for the winter.
The grasshopper thinks he's a fool and laughs and dances and plays the summer
away.
Come winter, the shivering grasshopper calls a press conference and demands to
know why the ant should be allowed to be warm and well fed while others are cold
and starving.
CBS, NBC, and ABC show up to provide pictures of the shivering grasshopper next
to a video of the ant in his comfortable home with a table filled with food.
America is stunned by the sharp contrast. How can this be, that in a country of
such wealth, this poor grasshopper is allowed to suffer so?
Kermit the Frog appears on Oprah with the grasshopper, and everybody cries when
they sing, "It's Not Easy Being Green."
Jesse Jackson stages a demonstration in front of the ant's house where the news
stations film the group singing, "We shall overcome."
Jesse then has the group kneel down to pray to God for the grasshopper's sake.
Tom Daschle & John Kerry exclaim in an interview with Peter Jennings that the
ant has gotten rich off the back of the grasshopper, and both call for an
immediate tax hike on the ant to make him pay his "fair share."
Finally, the EEOC drafts the "Economic Equity and Anti-Grasshopper Act,"
retroactive to the beginning of the summer. The ant is fined for failing to
hire a proportionate number of green bugs and, having nothing left to pay his
retroactive taxes, his home is confiscated by the government.
Hillary gets her old law firm to represent the grasshopper in a defamation suit
against the ant, and the case is tried before a panel of federal judges that
Bill appointed from a list of single-parent welfare recipients.
The ant loses the case.
The story ends as we see the grasshopper finishing up the last bits of the ant's
food while the government house he is in, which just happens to be the ant's old
house, crumbles around him because he doesn't maintain it.
The ant has disappeared in the snow.
The grasshopper is found dead in a drug related incident and the house, now
abandoned, is taken over by a gang of spiders who terrorize the once peaceful
neighborhood.
MORAL OF THE STORY: Vote Republican

24-HOUR LAYERED LETTUCE SALAD
Serves 8-12

(Make ahead and let sit overnight or 5 hours)
1 head lettuce, torn by hand
1/2 head cauliflower, sliced
1/2 bunch broccoli, sliced small
1 medium onion, sliced thin, separate in rings
2 bunches chopped green onions
1 lb. fried and crumbled bacon
1/2 cup sugar
1 cup mayonnaise
1/2 cup parmesan cheese
Wash vegetables and drain well. Place all ingredients in large bowl in order.
Spread mayonnaise over complete top to seal. Sprinkle top with parmesan cheese.
Refrigerate at least overnight. Toss just before serving.
BALSAMIC CHICKEN

INGREDIENTS:
4 broiler-fryer chicken breast halves, skinned and boned
2 teaspoons lemon-pepper seasoning
1-1/2 teaspoons extra virgin olive oil
1/3 cup balsamic vinegar
1/4 cup chicken broth
2 garlic cloves, minced
4 teaspoons butter
parsley sprigs
cherry tomatoes
DIRECTIONS:
On hard surface with meat mallet or similar flattening utensil, lightly pound
chicken to 1/4-inch thickness. Press lemon-pepper seasoning evenly on both sides
of chicken. In large fry pan, place oil and heat to medium temperature. Add
chicken and cook, turning once, about 7 minutes or until fork can be inserted in
chicken with ease.
Remove chicken to warm serving platter; keep warm.
In medium bowl, mix together vinegar, broth and garlic; add to fry pan. Cook
over medium-high heat, scraping up brown meat bits, about 2 minutes or until
mixture is reduced and syrupy. Add butter; stir to melt.
Place chicken on serving dish and spoon sauce over chicken. Garnish with parsley
sprigs and cherry tomatoes.
BREAKFAST BREAD PUDDING
(SLOW COOKER RECIPE)

4 1/2 cups cubed French or Italian bread
3 large cooking apples (such as Granny Smith), peeled, cored and chopped
1 tsp. ground cinnamon
1/2 tsp. ground allspice
1/4 cup firmly packed light brown sugar
1/4 tsp. salt
2 cups milk or soy milk
1/4 cup maple syrup
12 ounces cooked sausage, crumbled
Lightly oil the inside of a 4-quart slow cooker. Press half of the bread cubes
into the bottom of the cooker.
In a large mixing bowl, combine the apples, cinnamon, allspice, brown sugar and
salt. Add the milk and maple syrup and mix well.
Pour half of the apple mixture over the bread in the slow cooker. Gently press
down on the apples to ensure the liquid is absorbed by the bread.
Spread half of the soy sausage over the apples, followed by the remaining bread.
Top the bread with the remaining sausage, followed by the remaining apple
mixture. Press on the apple to ensure the liquid is absorbed.
Cover and cook on low for 6 hours.
Makes 4 to 6 servings.
PEANUTTY CHICKEN
Makes 4 servings

Ingredients:
1 tsp. chili powder
1 tsp. salt
1/4 tsp. pepper
1 cut-up fryer (3-1/2 to 4 pounds)
5 Tbsp. butter or margarine
1 cup orange juice
2/3 to 1 cup salted peanuts
Orange slices and minced fresh cilantro or parsley, optional
Directions:
Combine chili powder, salt and pepper; rub over chicken. In large skillet, saute
chicken in butter until golden brown. Reduce heat; cover and cook until juices
run clear, about 30 minutes. Transfer chicken to a serving platter and keep
warm.
Add orange juice to skillet, stirring to loosen browned bits from pan; simmer
for 5 minutes.
Pour over chicken. Sprinkle with peanuts. Add garnish if desired.
ROCKY ROAD PIE
(Makes 10 servings)

1 quart chocolate ice cream, softened
½ cup chopped peanuts
¼ cup chopped semisweet chocolate pieces
½ cup marshmallow cream
¼ cup chocolate syrup
1 9-inch baked graham cracker crust
In large mixing bowl combine ice cream with peanuts and chocolate pieces.
Gently swirl marshmallow cream and 2 tablespoons chocolate syrup into ice cream
to create marbled effect. Spoon into prepared crust. Drizzle on remaining
chocolate syrup; freeze until firm or up to 2 days.

Heart Healthy...
OAT BRAN MUFFINS

1/4 cup Unsweetened Applesauce
1 Large Egg
1 & 1/2 cups low fat buttermilk
3 Tbsp Canola Oil
2 tsp Vanilla
1/8 tsp Salt
1/4 cup Nonfat Dry Milk
3/4 cup Splenda
1 cup Oat Bran
1 & 1/2 cups all-purpose flour
1 & 1/2 tsp Baking Soda
1 tsp Cinnamon
2 Tbsp Flax Seeds (Available at health food stores)
2 Tbsp raisins
Preheat oven to 350°F. Spray a muffin pan with nonstick spray or line muffin
cups with paper liners. Mix applesauce, egg, buttermilk, oil, vanilla, salt, dry
milk, and SPLENDA(r) Granular together in a large mixing bowl using a wire
whisk. Stir until well blended. Add remaining oat bran, flour, baking soda, and
cinnamon. Stir well. Add remaining ingredients and stir until well mixed.
Fill muffin cups with batter. Sprinkle tops with some bran flakes as a garnish,
if desired. Bake in preheated 350°F oven 20-25 minutes. Muffins will spring back
slightly to the touch when done.
Try adding 1/4 cup sunflower seeds, or 1 cup blueberries or 1 cup raspberries,
or 1 Tbsp. grated orange zest to the batter for flavor variety.
12 servings
Per Serving (excluding unknown items): 174 Calories; 5g Fat (26.2% calories from
fat); 6g Protein; 28g Carbohydrate; 2g Dietary Fiber; 17mg Cholesterol; 255mg
Sodium.

For Two...
APPLE LEMON PUFF

1-1/2 teaspoons butter or margarine
1 small apple, peeled, cored and cut into rings
6 teaspoons sugar, divided
1 egg, separated
1/2 teaspoon grated lemon peel
1/4 teaspoon vanilla extract
1/2 teaspoon all-purpose flour
In a skillet over medium heat, melt butter. Add apple rings; sprinkle with 2
teaspoons of sugar. Cook until tender, turning once. In a mixing bowl, beat the
egg yolk, lemon peel and vanilla for 1 minute. In another mixing bowl, beat egg
white until stiff peaks form; fold in flour and remaining sugar. Fold into egg
yolk mixture. Place apple rings in a greased 2-cup baking dish. Spread egg
mixture on top. Bake at 350 degrees for 15-18 minutes or until golden brown and
set. Invert onto a serving plate.
Yield: 1 serving.

BOW TIES ALLE PORTOFINO
Serves 6
1 pound Bow Ties, Radiatore or other medium pasta shape, uncooked
1 pound medium fresh shrimp, peeled and deveined, or 1 pound small frozen
shrimp, thawed
12 sun-dried tomatoes, drained and cut into strips
8 fresh plum tomatoes, cut into small cubes
2 bunches arugula, cleaned and torn into bite-sized pieces
6 sprigs fresh Italian parsley, coarsely chopped
1/2 small bunch fresh basil, leaves picked and coarsely chopped
1/4 cup olive or vegetable oil
Juice of one lemon
Salt and freshly ground black pepper to taste
Cook pasta according to package directions. While pasta is cooking, steam the
shrimp until the shrimp are no longer translucent. Put shrimp in mixing bowl.
Add sun-dried tomatoes, fresh tomatoes, arugula, parsley and basil.
When pasta is done, drain well and immediately add to the mixing bowl. Add oil,
lemon juice and salt and pepper to taste. Toss quickly and very well, and serve
immediately.
