Publisher's Desk...
Good morning. In line with our past theme and the current “Discussion Forum” topic I have shared some delicious recipes that will certainly please the palate. Because of their low fat, low calorie attributes, they will please the waistline, too. I hope you enjoy a sampling of my own healthier eating collection today.
You read in each issue how important your vote is to the success of this publication. Do you understand why that is? You see, the more members we get, the greater the number of recipes submitted for publication. Therefore, more votes equal better issues and greater variety of recipes in each. Besides, wouldn’t it make you feel better knowing you did something to participate that no one else can do? Yes, no one can place your vote but you. Your vote is a unique and truly personal way to show you are grateful for receiving the issues every day. Not many folks report to work every day but yours truly does just that with each issue – every day. Do something nice in return by voting every day, ok? Thanks in advance.

I don't fry bacon anymore - I bake it. Just put the strips on parchment paper in a cookie sheet or on racks placed in a cookie sheet and bake at 350 degrees until it's done to your crispness level. No splatters and much less cleanup. I usually bake 2-3 pounds at a time and freeze the extra.

How about that aphrodisiac to all...chocolate? Share your favorite recipes for romance with us, won't you? Now, here is the NEW set of rules:

Send your recipes no later than the last Friday of each month to have them posted in the next monthly theme issue. You may send in TWO of your favorite theme recipes in ONE email. If the number of recipes exceeds those needed in the issue, the publisher will post as many from every submitter as possible and save the remaining recipes for the following Sundays of that month. The rules for recipe submissions for the monthly theme issues are the same as ALL recipes submitted for posting.
As a service to your fellow readers, please send only recipes that are in a form that others could easily copy and save for their own use. Recipes that would require a lot of editing or cleaning up or use non-standard measurements should not be submitted. Recipes without a name and location of sender may NOT be posted or posted without any credit given. There will be NO recipes posted that are from other recipe-zines. A to Z Recipes protects the privacy of its readers and does NOT publish email addresses. There will be no exceptions.
The deadline for February's theme issue is Friday, January 30th.
Theme recipes must have subject: "Recipes for Romance" and will be posted on Sunday, February 1st.

GREEK-STYLE CHICKEN WITH LEMON-PISTACHIO RICE
American Heart Association One-Dish Meals Cookbook
When you remove this meal from the oven, you’ll think you’re in a kitchen in Greece. The aroma is a delightful portent of good things to come.
Ingredients:
1 1/2 cups fat-free, low-sodium chicken broth
Directions:
Preheat the oven to 375°F.
In an 8-inch glass or metal baking dish, stir together the broth, rice, spinach, tomatoes, lemon zest, 2 tablespoons lemon juice, 2 tablespoons pistachios, 1 tablespoon oregano, 1 tablespoon dillweed, cinnamon, and pepper. Push the mixture to the side.
Add the chicken breasts. Spoon a small amount of the rice mixture over them. Cover with aluminum foil.
Bake for 50 to 60 minutes, or until the chicken is no longer pink in the center and the rice is tender.
Meanwhile, stir together the yogurt and 2 teaspoons lemon juice.
To serve, spoon the yogurt mixture over the chicken, rice, and vegetables. Sprinkle with the remaining pistachios. Garnish with oregano, dillweed, and lemon zest.
Serves 4; 3 ounces chicken and about 1 cup rice and vegetables per serving

ROASTED ONION-GARLIC SOUP
3 Spanish onions, cut in 1/2 lengthwise then thinly sliced
Set oven rack at lowest level, preheat to 450 degrees. Combine onions, shallots, garlic and oil in large shallow roasting pan. Roast for 20 to 30 minutes, stirring every 5 minutes, or until onions are golden brown. Remove from onion and pour in 1 cup of chicken broth. Stir liquid in pan, scraping the bottom to loosen and dissolve caramelized bits. Transfer the onion mixture to a soup pot and add brandy, thyme and remaining broth. Bring to a boil, reduce heat to low and simmer, covered, for 30 minutes. Season to taste with salt and pepper. Serve topped with parmesan and perhaps some toasted French bread.
Nutrition Facts:
LOW-FAT PEANUT BUTTER PIE
Ingredients:
1 (12-ounce) can evaporated skim milk
Directions:
1. Whisk milk and gelatin together in medium-size heavy saucepan set over low heat. Whisk constantly until mixture boils and gelatin dissolves completely (about 2 minutes). Transfer to heatproof bowl and cool 15 minutes.
2. Meanwhile, beat cream cheese and 10X sugar at low mixer speed in large bowl until smooth (about 1 minute). Scrape down sides of bowl, add peanut butter and vanilla, and beat 1 minute more. Again scrape down sides of bowl.
3. With mixer still at low speed, slowly add milk-gelatin mixture and beat until very smooth (about 2 minutes.) Don't forget to scrape down sides of bowl at half time.
4. Set pie crust in 10-inch pie pan or on small baking sheet (this is to catch any spills), then carefully pour in peanut butter filling (it will come right to top of crust).
5. Set uncovered in refrigerator and chill several hours until set.
6. Cut into wedges and serve.
Makes 1, 9 inch pie, 10 servings.
Note: Instead of using commercial low-fat whipped topping in this recipe, we've substituted low-fat cream cheese whipped until silky smooth with evaporated skim milk. Our taste testers pronounced the results “heavenly.” Pie contains 264 calories, 13 g fat, 17 mg cholesterol and 275 mg sodium.
